The medium fatty cut of our Bluefin tuna. Combining a perfect balance between lean and fatty tuna meat. Think of the most premium cut of beef sirloin you can find and you will almost (but not quite) be at the level of our chutoro. A super delicate texture offering a tender and sweeter flavour.
