Immediately after processing, our tuna is super frozen at –60°C, the same method used by the most experienced and elite bluefin processors across the world. This ultra-cold preservation locks in vibrant colour, rich buttery flavour, and silky texture, so you can enjoy your tuna raw for sushi and sashimi, or lightly seared for an unforgettable steak.
Every bluefin saku block is fully traceable — simply enter the batch number from your label on our Traceability Page to learn everything about your fish. You can even see the exact location in the English Channel it was caught. This transparency ensures you always know the exact origin and condition of your fish.
